Cut the pork loin into large pieces. Peel the onion and cut it into wide rings.
Put layers of meat and onions in a hollow ware (dishes must be enameled, glass or ceramic).
Pour yogurt over the meat with onions, add chopped garlic and sugar, salt and pepper.
Add finely chopped fresh herbs, ginger, coriander, cumin, cardamom - all mixed thoroughly, cover with lid and marinate for 3 hours.
Skewered meat on skewers and fry until cooked.
